Spam Fried Rice
Crispy spam, fluffy eggs, tender vegetables, and day-old rice come together for the ultimate Spam Fried Rice. This quick and flavorful stir fry is easy to make at home and perfect for using up leftovers. With savory soy sauce seasoning and that signature wok flavor, it’s a comforting meal any time of day.
Spam Fried Rice
Ingredients
1 can Spam, diced
2 eggs, whisked
1 small onion, diced
3–4 cloves garlic, minced
1 carrot, diced
1 cup broccoli florets
3 cups day-old rice
2 tbsp light soy sauce
2 tbsp oil (for cooking)
Salt and freshly ground black pepper, to taste
Instructions
Dice spam, onions, garlic, carrots, and broccoli. Set aside.
Heat a wok or cast-iron skillet over medium-high heat. Add oil.
Add spam and cook until crispy, rendering out the fat. Remove and set aside.
Scramble eggs in the wok, season with salt and pepper, then remove and set aside.
Add broccoli, stir-fry for 2–3 minutes, season, then remove.
Stir-fry onions, garlic, and carrots until softened and fragrant.
Add day-old rice, breaking apart clumps, and stir-fry for 3–5 minutes.
Return spam and broccoli to the wok.
Drizzle soy sauce along the edges of the wok and toss everything together.
Add eggs back in and stir until well combined.
Serving
Serve hot straight from the wok. Top with sliced green onions or a drizzle of sesame oil for extra flavor.
